Preheat oven to 425 degrees and place 12 medium to large baking paper cups in your muffin tin pan, no greasing necessary.
2 cups Bisquick Baking Mix
3/4 cup white granulated sugar
1 large egg
1 cup low fat or 1% sour cream
Measure all 4 ingredients into a large bowl and mix with spoon or fork till no lumps. Add 1 cup of fresh or frozen blueberries, just turn them into the batter. Put a large spoon of batter in each muffin cup and bake for 20 minutes at 425 F. When finished pull out of oven and let sit in pan for about 10 minutes then you can handle them to remove.
Great for breakfast! By the time you mix this up and put in the oven to bake, put the coffee pot on and get your morning newspaper these are ready to eat.
Homemade baking mix
6 cups all p flour
3 tblsp baking powder
1 tbsp salt
1 cup crisco
Pulse together till gritty, store for 1 month in fridge
