This is just a feel healthy sandwich! Locally there was a small health food restaurant called "The Natural Food Emporium" where you could have this great food. The place is long gone but not the memories of such good eating. I used to take my boys there when they were small and yes they were the only kids in the place,,,, but they both loved veggies.
Ingredients are to make 1 whole pita as pictured above, if you are very hungry you can eat both halves.
1 whole grain Pita Pocket - cut in half and open fold
Mix the carrot salad in a small bowl:
1 cleaned large carrot shredded
handful of raisins
1 tbsp of finely diced spanish onion
1 tbsp of Hellmans Mayo - low fat
Assemble Pita
push into the pita 1 full leave of romaine lettuce or leaf lettuce
3 slices of cucumber on one side of the pita
2 slices of tomato on the other side of the pita
spoon 1/2 of the carrot salad into the pita
top with grated "old" white cheddar cheese (this is the best)
sprinkle with fresh alfalfa sprouts on top, spilling out
Start having these for lunch regularly and you honestly will feel like you are really giving your body a boost! How healthy can you be???
