I guess if you are from Western Canada (1930's) you would call these Matrimonial Cake and it was given to the dessert since it is made up of both smooth and rough textures which are said to reflect the contrast between the easy and difficult times of marriage. Well considering that; maybe we should be using that name if we make these once we are married and when we are single we can just call them Date Squares?? This is my Mom's recipe and they also celebrated their 60th Wedding Anniversary as of Nov 2010 so they know more about the smooth and rough spots than many of us!!!
First Step to make the Crumb Layers:
1 1/4 cup all purpose flour
1 1/2 cup Quaker Quick rolled Oats
1 cup brown sugar packed
1 tsp baking soda
1/2 tsp salt
1 cup soft butter (i would stay with the butter as it is better than margarine in the outcome) My spiel on butter is borrowed from my hero Julia Child - she says all things in moderation!!!!! Which is perfect. Indulge and allow yourself to enjoy just don't over do it.
Measure everything into a large bowl. Cut the butter into ingredients till crumbly. Grease a 9 x 9 inch pan. Use 1/2 of the mixture and press into the bottom of the pan. Make the date filling and spread next. Then finish top with balance of the crumble layer.
Date Filling:
1/2 lb to 2/3 lb of cut up dates
1/2 cup granulated sugar
2/3 cup water
In small saucepan combine above and heat on medium till dates are mushy. Stir and cook till you like the consistency.
Bake at 350F for 30 minutes. Top will be golden brown. Let sit till completely cool before trying to cut into squares.
