Pancakes - Nanny's recipe

Did you ever have pancakes for dinner?  We do.   Once in a while I get a craving for them, its most likely the syrup and butter that I crave, ha ha.  These are a thin batter so you can eat a couple without feeling like you are stuffed!
I don't like a thick fluffy heavy pancake, and my mom always whipped up these thin ones that almost remind you of a thick crepe.  This morning was a snow storm day and I thought while making a pot of coffee we are going to have some pancakes before we get out there and shovel that snow!  

You can do these small or large on a griddle or in a non-stick pan.  I like to use a dab of Crisco vegetable shortening (made from soy beans) to grease the pan or the griddle. 

In a mixing bowl add 1 egg, 1 cup low fat milk, 1 cup all purpose flour, 2 tbsp vegetable oil, 1 tbsp white gran sugar, 1 tsp baking powder, 1 tsp baking soda, 1/2 tsp salt.  Whisk together.  Heat griddle/pan and spray with nonstick cooking spray or the dab of shortening.  Pour to 1/2 the size you like and then if using a pan swirl around to twice the size, on a griddle you can spread with a spatula.    In a pan I use high or just between the high to medium heat - they cook quickly, flip and finish other side.
Serve with lots of butter and your favorite syrup.   
You can add a whole grain flour to this or half it with the all-purpose flour if you want a healthier serving.  Still yummy!
