Beer Bread + Chili
Everyone has their favourite recipe for Chili so i am not going to bother with it but to accompany the pot of chili is a great loaf that is hearty and wonderful served warm. Do you have a bottle of beer? Nope not an empty one.... ! If you can stir you can make this.
1 bottle of beer - open and let it sit to room temperature
2 3/4 cup of all purpose white flour, or whole wheat would be great too for a grainy texture
4 tsp baking powder
1 tbsp white granulated sugar
1/2 tsp salt
1/4 tsp dry mustard (if you don't keep this in the house try the wet mustard)
1 1/4 cups grated cheddar cheese - old or medium for flavour and you can use the low fat if you like
Preheat oven to 350 F.
Grease a loaf pan or you could use a 9" baking/cake pan.
In a large mixing bowl combine flour, baking powder, sugar, salt and Keen's dry mustard. Mix well.
Add 1 cup of cheese mixture, mix.
Pour in beer, if you need to use wet mustard add it now. Combine with mixing spoon.
Pour batter into loaf or cake pan.
Top with 1/2 cup of cheese.
Bake 45 to 50 minutes till toothpick comes out clean.
Cool a few minutes before turning out - you can slice hot if you use a sharp knife.
Enjoy dipping into a bowl of chili.
This makes enough for 4 to 6 servings, it is best same day.
