Remember the first Shrek movie? My youngest used to say this line all the time when he watched it (it was the donkey who said it !!) and yes we would usually make some waffles! You do need an electric waffle maker. In the summer I made a couple batches of these when our in-laws came to visit. In the morning I just warmed them up in my oven at 325F for about 5 minutes and served with fresh Strawberry Sauce. I use Julia Child's recipe to follow at the bottom.
Step 1: In a large bowl, whisk together 1 1/2 cups of all purpose flour, 1 tbsp white sugar, 2 tsp baking powder and 1/4 tsp salt.
Step 2: use 2 eggs. In a small bowl separate the whites from the yolks. Put a glass bowl + beaters + egg whites into the freezer for a couple of minutes. Step 3: Keep the egg yolks in a medium bowl and add 1 tsp vanilla and 1 1/2 cups of milk. Whisk together by hand. Pour the egg mixture into the flour mixture and whisk by hand, will be a bit thick. Set aside.
Step 4: Remove from the freezer the cold bowl, egg whites and beaters out to the counter (this step will guarantee your egg whites to beat and peak easily). Beat with mixer till egg whites make soft peaks. Sprinkle 1 tbsp baking soda over egg whites and beat till stiff peaks occur.
Step 5: Have the waffle iron heating up for start. Have 2 tbsp oil in small bowl + brush to lubricate lightly (do this after each set).
Step 6: Fold half the egg whites into the batter with spatula. Add remaining egg whites and fold through.
Step 7: Pour about 1 cup of batter - 1/2 cup each side onto the waffle iron.
Step 8: Bake till indicator says they are ready. Mine makes 8 waffles.
If you just have a few left you can warm them up tomorrow in the toaster.
Fresh Strawberry Sauce
1 quart fresh picked strawberries - hulled and cleaned
1/2 cup gran sugar
3 tbsp cognac or amaretto
In pan crush strawberries with sugar add liqueur.
Cook over medium to a boil. Remove from heat and cool. Serve in a glass gravy boat. The liqueur adds a beautiful mild flavour.
