There are certain recipes that you make over and over again. In fact the sheets are usually stuck together from remnants of the baking ! This is one of those from Jean Pare and her Company's Coming Series - Muffins & More. Still think it is one of the best.
1/2 cup of butter or margarine
1 cup of granulated sugar
2 eggs
1 cup mashed bananas (3 medium)
1 3/4 cup all purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
chopped walnuts is optional 3/4 cup
or 3/4 cup semi sweet chocolate chips
Grease loaf pan with shortening or PAM. Preheat oven 350F.
With hand mixer cream butter and sugar together. Beat in eggs one at a time, beating till smooth. Add mashed bananas and blend in.
In second bowl, stir flour with baking soda, baking powder, salt and nuts.
Add this dry mixture to the wet mixture bowl. Stir enough to mix.
Pour batter into the loaf pan. Bake at 350F oven for about 1 hour until inserted toothpick comes out clean. Let stand in the pan for 10 minutes. remove from pan and place on plate to cool.
