Some recipes can be quite a surprise!
When I was a little girl the older neighbour lady across the road always made homemade peanut brittle for Halloween. It was so good and all the kids around looked forward to it. She made it the old fashioned candy way where you boiled it on the stove. It always seemed so intimidating and I never did try to make it.
When I was working there was a young girl I worked with who brought in homemade peanut brittle and I was so impressed that she made it but she thought it quite funny since she did it in the microwave and said it was a breeze! Really who would think you could do this. So I make this recipe and sometimes my grown kids get bags of it for Christmas too. :)
1/2 cup unsalted peanuts - can be dry roasted
1 cup granulated sugar
1/2 cup light corn syrup
pinch of salt
1 tbsp butter
1 tsp vanilla
1 1/4 tsp baking soda (this will really expand the candy)
Butter a large baking sheet. In a microwave bowl combine peanuts, sugar, corn syrup and salt. Microwave on high 6 minutes.... it should be bubbling vigorously. Remove bowl with oven mitts from the microwave and stir in butter and vanilla. Return to microwave and cook on high 3 minutes till light golden brown. Remove the bowl using oven mitts. Quickly add baking soda to the candy mixture and stir. Immediately pour out onto the baking sheet, faster you get it on the sheet the better as it will start to harden in the bowl on the spoon and on the sheet. Shake the baking sheet side to side and it will spread before it starts to harden. Let stand for 2 hours in room temperature. With a heavy spoon you can pound on top and it will break apart into bite size pieces. Store in airtight containers.
