Cherry Cheesecake Delight

This is such a great holiday dessert, often we have it at Christmas or Thanksgiving or Easter when we get together as a family.   Tomorrow we are taking it to the US Thanksgiving Dinner at the RV park we are camped in.  They are bringing the Turkey, Stuffing and Gravy and all the other campers are bringing potluck.  I know there will not be much left of this although Billy is hoping so as he wants to bring it home after!

Base:
2 cups graham cracker crumbs
1/2 cup melted butter
1/4 cup sugar
Mix together in bowl with fork and pat into the bottom and sides of a 13 x 9 inch pan, or this one is about 11 x11 corning ware.  Refrigerate for 10 minutes.
Creamy Filling:
1 envelope of dream whip made as directions on package (1/2 cup milk + 1 tsp vanilla)  I make this and keep it in the fridge while I continue with the rest of the filling.
1 large Philadelphia cream cheese
1 cup icing sugar
Mix cream cheese and icing sugar in bowl with mixer till creamy and smooth.  Then add the dream whip to the mixer and and cream together.
Assemble:
Remove the crust from the fridge, pour the creamy cheese filling on top, smooth with spatula.
Cover with two large cans of cherry pie filling.
Refrigerate for at least 4 hours or overnight.
Cut and serve cold.
Delicious!

Chocolate Eclair Icebox Dessert

This is the perfect company dessert - very decadent!  The name describes what it really tastes like - Chocolate Eclairs!  This can serve up to 15 people quite easily in a 13" x 9" pan or you can make a 1/2 version in a 9" x 9" pan.   When you serve it at first friends will think it is going to be very rich but are surprised it is actually yummy but a lite version.
Start 5 hours before serving - don't try and cheat this.  Great to make the day before.

Full size 13" x 9" ingredients below:
Christie Low Fat Graham Whole Crackers  22 1/2 sheets  (1 box 14oz)
Pam cooking spray
3 cups fat free milk
2 pkgs (3.4oz) fat free vanilla instant pudding mix
1 tub (8 oz) softened   fat free or calorie reduced Kraft Philadelphia Cream cheese
1 tub (8 oz) softened  Cool Whip - calorie reduced or fat free
1/4 cup fat free milk
2 tbsp butter softened
2 tbsp honey
2 oz unsweetened chocolate melted - tip: i do this in the microwave for 1 minute just before using
1 1/2 cups icing sugar
Step 1:
Spray pan with cooking spray and lay whole graham crackers on bottom of the pan.  
Step 2:
In large bowl combine 3 cups milk, pudding mix, soft cream cheese. Beat with hand mixer on low for 1 to 2 minutes till mixed.  Add in softened Cool Whip by hand.  Spread half of this mixture over top of the crackers in the pan.  Top with  another layer of crackers.  Then spread the other half of the pudding mixture on top.   Add another layer of crackers.  Set aside for couple of minutes.
Step 3:
Combine 1/4 milk, soft butter, honey, and melted chocolate in new large bowl.  Beat together slowly with hand mixer.   Slowly add the icing sugar till thoroughly mixed.  Spread this topping over crackers with spatula.
Step 4:  Cover with aluminum foil - careful not to let it touch - use extra amount and make a tent with the foil.  Chill 4 hours before serving.   This is critical as it is needed to softened the crackers and set the dessert so you can cut and serve it into square pieces.
